Pizza Sauce

People always wonder about proper Pizza Sauce, ultimately ending up applying Tomato Ketchup on Pizza Base.

I usually make the sauce as below (Taken From Here, with modification)

1) Put the tomatoes in hot water. After 10 minutes, remove the skin and Blend into a pulp.

2) Heat the oil and fry the onion and Garlic for at least 5 minutes.

3) Add 1/2 teacup of water and cook for 3 to 4 minutes.

4) Add the tomato pulp, chili powder, oregano, sugar and salt.

5) Boil on a slow flame for at least 10 minutes.

6) Use as required.

Greek Garlic Lemon Potatoes(Patates sto Fourno)

This is a Greek recipe for Garlic and Lemon Potatoes that is usually served with roasted chicken/grilled fish dishes. The potatoes are mostly cubed and browned. Once it’s done, lemon juice and garlic is added towards the end. It is amazingly crunchy dish where the blast of freshness hits thanks to lemon and light garlic-y touch reminds you of Garlic fries. In short – if you like garlic and roasted potatoes, this is perfect for you. So… Let’s start making this….

1) Chop the potatoes like wedges. Usually the potatoes are peeled but you can use Potatoes with peels.

2) Heat 1 tbsp oil and butter in a large skillet over med-high heat. Once the butter has melted, brown the potatoes on both the cut sides, each side about 5-6 minutes.

3) Reduce the heat to med-low, cover and cook the potatoes until tender.

4) Meanwhile mix together oil, lemon juice, zest, oregano, minced garlic, salt and pepper in a small bowl.

5) When the potatoes are tender, add the garlic-lemon mixture and stir very gently. The potatoes will break otherwise.

6) Continue to cook, uncovered for 3-4 minutes. Once you see the crusty surface on the potatoes, add Parmesan cheese (or even regular processed cheese if you like that way! 😉 )

Garnish with parsley or cilantro or coriander and the Potatoes are ready to serve…..

Chocolate Rum Balls (Non alcoholic)

It’s a quick recipe and I’m sure kids of all age- mentally as well as physically- will love it (And great for Valentines’ Day too). And the best part about this recipe is all the ingredients are available at home. So let’s start…

1) Get a pack of “Marrie” Biscuits and grind the biscuits to powder.

2) Now add powder sugar, Unsweetened Cocoa Powder and a little honey to it.

3) Add a cup of Orange Juice (Or as required for the mixture to resemble bread crumbs)

4) Take little lumps from the mixture and shape them into small balls.

5) Roll the balls into Icing Sugar (Or unsweetened Cocoa Powder) and serve them.

Misal Pao

Image Misal Pao is a very famous Maharashtrian Recipe, containing various sprouts and masalas.

Traditionally usal(the gravy part) is made with sprouted math beans, but I make it with a varietly of pulses (non sprouted)…

So let’s start….

First of all soak all the pulses over night and boil them ( I take Mung, Math, Chana and Dried Peas)

Now the recipe get divided into 3 parts, “Kaat”(Spicy Gravy),Usal and Misal…. So first we’ll make “Kaat”

For making Kaat:

1) First of all we’ll make Paste for Kaat. For that, Heat oil in a pan then add ginger paste, garlic paste and chopped onion. Sauté the mixture till the onion is translucent. Now add chopped tomatoes and grated coconut. Mix well and sauté it for few minutes. Allow this mixture to cool down. Once it’s done, grind it into a paste.

2) Now to make the gravy, Heat oil in a pan, add the ready paste into oil and sauté it for 2 minutes. Then add salt, red chili powder, garam masala, turmeric powder, cumin-coriander powder, clove-cinnamon powder and mix it. Then add water (3 cups or as required) in it. Cook till the mixture starts leaving oil. Transfer it in a bowl and keep it aside.

Now it’s time to make Usal:

3) Heat oil in a pan. Add ginger paste, garlic paste and hing, sauté it for a minute. Then add soaked & boiled sprouts. Mix it well. Then add salt, turmeric powder, garam masala, clove-cinnamon powder and lime juice. Add water to it and cook it for 8-10 minutes.

Now for the final Part- Misal:

4) To make Misal:
Take a serving bowl.
First pour ready usal in the bowl, then pour the red gravy over it. Thereafter, add finely chopped onion, farsan(Chavanu) to the mixture. Garnish it with chopped coriander. Serve it with pao and a slice of lemon

Corn in White Sauce

Well….. It’s a real simple recipe to start with…

All you need is some Golden Corn, Jalapenos(If not simple green chillies would do) and Alfredo Sauce… So let’s start making Corn in White Sauce.

1)  Boil the corn kernels (not in Pressure Cooker) with li’l butter and salt.

2) Meanwhile the corn is boiling, let’s make Alfredo sauce(White Sauce)…. In a pan, take two tbsp of butter and add all-purpose flour (Maida) in it and saute till the flour turns Golden Brown.

3) Once Done, Add Milk in it as needed (I needed almost 750 ml), mix it well and make sure the flour is not making lumps, add salt and pepper to it and let it simmer for approx 5 to 6 mins. Add Garlic and Cheese (Both are optional) as per taste and whisk it properly. The Alfredo is Ready…

4)Now drain the Corns and add them into the sauce and mix well. You can add Bell Peppers and other veggies as well

For serving I got the small canapes (available in most of Provision/General stores near your home, they call it ‘Basket’), and filled them with the mixture I’ve made, you can have it like that with some more cheese on top.

Apple Cake (Eggless)

Ingredients:
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tbsp ghee, softened
1-3/4 tbsp vegetable oil
2/3 cup Sugar
1-1/2 tbsp cane sugar (or use regular sugar)
1/2 teaspoon pure vanilla extract
1 1/2 cup butter milk
2 Apple, nicely chopped

Method:

  • Preheat oven to 350°F(180 C) with rack in middle.
  • Grease a 9-inch round cake pan.
  • Whisk together flour, baking powder, baking soda, and salt.
  • Beat butter,oil and 2/3 cup sugar with an electric mixer at medium-high speed,for 2 minutes, then beat in vanilla, for another minute
  • Now, gently mix in flour mixture while adding buttermilk in it.
  • Mix and beat the batter till it get smooth and fluffy
  • Fold in chopped Apple.
  • Spoon batter into cake pan, smoothing top
  • Bake until cake is golden and a wooden pick inserted into center comes out clean, 25 to 30 minutes (depends on your oven).
  • Cool in pan 10 minutes, then turn out onto a rack and cool to warm, 10 to 15 minutes more.You can enjoy it with whipped cream on top, ice cream or just on its own.

(P.S.: I’d added apple slices along with sugar on the top, but it doesn’t taste good)

Banana-Strawberry Smoothie

so… lemme start this with a very simple one..

Banana-Strawberry smoothie is a delicious and simple smoothie, loved by everyone. To make that, you’ll need following ingredients:

1 Banana

2 tbsp Nesquik Strawberry

2 tsp sugar(or sugar-free, whichever u like)

2 cup milk

 

Procedure:

simply add up all the ingredients in your mixie jar. Blend it well and the smoothie is ready
